I found the probate for Mathias Hansen (Nielsen) Pouli 29 August 1875. I need to know any information on his death, I cannot find a burial record in the Egersund church record. A bio states he is from Copenhagen. I need an age for a birth year.

That far back, in 1775, there may not be any more information beyond the probate. if you are sure he died in Egersund and there is no burial record for him (I took a look and agree there does not seem to be one.) then either there was no funeral (remember, these are records of church events. No funeral, no record.) as there would not have been if he drowned, for example, or he was buried elsewhere.

The record is from the combined probate districts Jæren and Dalane, which according to their FamilySearch Wiki page included the following locations:
- Høle
- Høyland
- Hå
- Håland
- Klepp
- Lye (Time)
- Ogna
- Stavanger City
- Egersund
- Helleland
- Lund
- Sokndal
Egersund is only one of the locations included, so perhaps his death record is in one of the other locations within this combined probate district. Do you have other records for Mathias Hansen Pouli, specifically in the Egersund parish? Glancing through the probate record, it looks like it's listing his widow (Johanne Hansdatter) and 4 daughters: Elen, age 12; Mallene, age 6; Louise, age 3; and Mathea, age 15 weeks. If you can locate the children's baptismal records (especially the baptismal record of the youngest, Mathea), that would help you know which parish to look for other records in.
